Operation: quinoa and black beans


Oh my gosh I have been a slacker in the dinner dept. No seriously. I have. I'm not entirely sure why? I know that the apparently rising cost of food has put a crimp in the amount/ingredients we need to sustain us for a week. If I go to costco, all I can get is the basics for recipes. If I go just to Wal-mart/carrs, we run out of stuff every week so it has to go back on the list. And really, I don't like having to pay for hamburger weekly. The sticker price just kills me.

Also, the fact that I'm trying to eat healthier and Matt has been on his own variation of food intake. Which means, things that I would would he couldn't eat. (low-grain with veggies ie no carbs) And I certainly don't care for eating a cow every night of the week. -see reason above-

The point of all this being is that I found a new recipe that called for things already on hand! Woo-hoo! And I'm kind of on this quinoa kick;)

I made it and it was delicious. Sassy pants raved about how good it was too. It had a little heat to it so I added some sour cream and that made all the difference. But, I did not take a picture:/ Lame. 

So, did any of you get inspired to tackle a 'pin' this week?

I made a pinterest find this week as well... pie pops for my Son's preschool class.

I wish I could get my husband to eat quinoa... he wants meat and potatos every night.

I'm glad you found this. This is my all-time favorite recipe! If I am adventurous, I make some chicken with it. :) Not that chicken is adventurous, just takes time.
